Erythritol is a sugar alcohol food additive. It occurs naturally in some fruits and fermented foods, but is mainly produced at an industrial level from glucose by fermentation with a yeast. It is 60-70% as sweet as table sugar, but does not affect blood sugar or cause tooth decay.
